Chocolate Hazelnut Crunch Cake

Hazelnut Crunch Layer Cake
Cake:
1/2 cup butter
1/3 cup cocoa powder
2/3 cup coconut flour
1/4 cup granulated erythritol
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
8 eggs
1 tsp vanilla or hazelnut extract
1/2 tsp liquid stevia extract
3/4 cup almond milk
Hazelnut Cream:
1/2 cup hazelnuts, toasted and husked
2 tbsp vegetable or nut oil
2 tbsp cocoa powder
1 tbsp erythritol, preferably powdered
1/4 tsp vanilla
1/4 cup whipping cream
Chocolate Ganache:
5 oz high % cacao chocolate (I use Lindt 85%)
4 tbsp butter
1/4 cup toasted, husked hazelnuts, coarsely chopped
For the cake, preheat the oven to 350F, and line two 8-inch round cake pans with parchment paper. Grease paper and sides of pan.
In a small saucepan over low heat, melt butter. Whisk in cocoa powder until smooth and set aside.
In a medium bowl, whisk together coconut flour, erythritol, baking powder, baking soda, and salt. Set aside.
In a larger bowl, beat eggs with vanilla or hazelnut extract and stevia extract until frothy. Add butter/cocoa mixture to eggs and beat until combined. Add half of coconut flour mixture and beat on low for a few moments, then add almond milk and beat in thoroughly. Add remaining coconut flour mixture and beat on low, then use a rubber spatula to stir and make sure all ingredients are well combined.
Divide batter evenly between prepared cake pans and smooth the tops. Bake for 25-30 minutes or until tops are set and tester inserted into the center comes out clean. Cool in pan 10 minutes, then flip out onto wire rack to cool completely.
For the hazelnut cream, grind hazelnuts in a food processor until finely ground and beginning to clump together. Add remaining ingredients and continue to process until creamy and smooth, scraping down sides of processor with a rubber spatula as needed*.
In a small bowl, beat whipping cream until it forms soft peaks. Stir in hazelnut mixture until fully combined.
Spread hazelnut cream on one layer of cake, then sprinkle with 2 tbsp of chopped, toasted hazelnuts. Top with second layer of cake.
For the ganache, in a small saucepan over low heat, melt butter and chocolate together. Stir until completely smooth. Pour about half over the top of prepared cake and spread with an offset spatula. Pour remaining ganache over top of prepared cake and spread to the edges, allowing some ganache to drip down the sides. Sprinkle with remaining chopped hazelnuts.
*Note: this is essentially homemade nutella. I made a larger batch of it a few days ahead, and when it came time to make the cake, I used about 1/2 - 3/4 cup to mix with the whipped cream. If you make it ahead of time and store it in the fridge, you will want to bring it to room temperature, or even a bit warmer by heating gently in your microwave, before mixing it into the whipped cream.

Lava cake

Lava cake is not just like any other cake. Like all other cakes, lava cake is also soft and spongy, but it has an extra quality which is found in no other cake, the liquid chocolate filled center!

The crunchy sides and the soft center of the cake can make anyone feel on top of the world, after just one bite!

Lava cake recipe is actually almost the same everywhere, however, a few modifications can be made in it to suit one's taste. Given below are some simple lava cake recipes, you can use these recipes at your next birthday party.

Lava Cupcake Recipe
Ingredients
2 egg yolks
½ cup butter
1 cup confectioners' sugar
4 squares of semi-sweet baking chocolate
Whipped cream
6 tbs flour
Process

Preheat the oven to 425 degrees. Butter ¾ of 4 custard cups and place them on the baking sheet.

Take a microwave safe bowl and melt chocolate and butter in it, for about 1 minute. Whisk the mixture with a wire whisk until chocolate is completely melted. Add in sugar, egg yolks and whisk well. Stir in flour, beat well so that no lumps are formed. Pour the batter equally into the prepared custard cups and bake in the preheated oven for about 14 minutes.

Flourless Chocolate Cake

Ingredients
3 large eggs, plus 4 large egg yolks at room temperature
2 tbs unsweetened cocoa powder
5 oz. semi-sweet chocolate
1 tbs coffee liqueur
5 ounces unsweetened baking chocolate
1½ cup sugar
2 tbs cornstarch
1¼ sticks of unsalted butter
½ tsp salt
Process
Take 8 four oz. cups, bowls or oven-proof ramekins. Butter and dust these bowls with sugar and set aside. Melt solid chocolate and butter in microwave until smooth, stir well and set aside.

In another large mixing bowl, whisk cornstarch, sugar, cocoa powder and salt together. When well blended, add the chocolate mixture and stir well.

Now add in liqueur, yolks and eggs whisk until all the ingredients are thoroughly incorporated. Pour ½ cup batter in ramekin or cups and bake at 375 degrees in a preheated oven for about 15-20 minutes.

The cakes are done when the crusts start cracking. Let them stand for 5 minutes and then use a knife to loosen the sides and then invert into a plate. Dust with powdered sugar while serving.

Molten Lava Cake Recipe

Ingredients
3 egg yolks
3 large eggs
10 tbs (1 ¼ stick) butter
6 (1 ounce) squares bittersweet chocolate
½ cup all-purpose flour
1½ cups confectioners' sugar
2 tbs orange liqueur
2 (1 ounce) squares semisweet chocolate
1 tsp vanilla extract

Process

Preheat the oven to 425°F and grease 6 custard cups. Melt chocolate and butter in a double boiler or microwave, when done add sugar and flour and mix well. Now add in yolks and eggs, mix until smooth and then add in orange liqueur along with vanilla extract.
